Unicorn & rainbow toast

Well, today I just want to make my brekkie colorful! Maybe it does not look professional  but the taste is adorable! 🙂

Lately I saw that Instagram is burning from the photos of unicorn and rainbow toasts. In the beginning I was a bit suspicious because of ingredients that I have to add to make a different colors. So I decide to give them a try. 

For the base I used Greek yogurt and light cream cheese (for vegans use plain Greek yogurt of choise), and soy paté. Colors are made by mixing natural spices and veggies like: Red (soy paté with red paprika powder), Green (soy paté with green spirulina powder), Yellow (cream cheese with Turmeric), Blue (cream cheese with blue spirulina), Pink (cream cheese with beet fresh juice or if don’t like freeze-dried strawberries or raspberries ), and Purple (cream cheese with freeze dried blueberries).

 

Ingredients

  • 2 tbsp cream cheese and 1 tbsp Greek yogurt
  • 1 tbsp soy paté
  • ¼ to ½ tsp beet juice (or 1 tsp. freeze-dried strawberries or raspberries)
  • 1 tsp turmeric powder
  • ¼ tsp green spirulina
  • ¼ tsp blue spirulina powder
  • 1 tsp  freeze-dried blueberries
  • 1 tsp red paprika powder
  • 1 slice whole-grain bread , toasted, cooled

Instructions

  1. Evenly divide cream cheese between four small bowls and two with soy paté.
  2. Add ¼ tsp beet juice to one bowl with cream cheese; mix until well blended. Add more beet juice if needed for color. Set aside.
  3. Add 1 tsp turmeric to one bowl with cream cheese; mix until well blended. Add more turmeric if needed for color. Set aside.
  4. Add ¼ green spirulina to one bowl with soy paté; mix until well blended. Add up to more if needed for color. Set aside.
  5. Add 1 tsp red paprika powder to one bowl with soy paté; mix until well blended.
  6. Add blue spirulina to one bowl with cream cheese; mix until well blended. Set aside.
  7. Place blueberries in a re-sealable plastic bag. Mash until powdered.
  8. Add mashed blueberries to one bowl; mix until well blended. Set aside.
  9. Place dollops of cream cheese randomly on toast. Spread with a butter knife, in a swirling motion to create a rainbow of color; serve immediately.
