Garlic roasted mushrooms in soy sauce


Simple and tasty mushrooms roasted in a balsamic-soy and garlic sauce! This is a totally vegetarian meal with some rice, just perfect for your dinner! 🙂

This dish is definitely for all those mushroom lovers out there! Mushrooms are one of my favorite foods and they go so well with garlic.  This can be a side dish as well. But, for my dinner tonight I choose to do it this way. With about two cups of portobello mushrooms on hand, I whipped out a few seasonings, a fresh herb, and balsamic vinegar to create a dish that was everything I wanted and more. Mushrooms are unique in that they are incredibly absorbent and will take on whatever flavor is added to them.



  • 2 pounds mushrooms
  • 1 tablespoon oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce (or tamari)
  • 3 cloves garlic, chopped
  • 1/2 teaspoon thyme, chopped
  • salt and pepper to taste


  1. Toss the mushrooms in the oil, balsamic vinegar, soy sauce, garlic, thyme, salt and pepper, arrange in a single layer on a baking pan and roast in a preheated 400F/200C oven until the mushrooms are tender, about 20 minutes, mixing half way through.
