Hi my dears! It’s been a busy, busy these days but I haven’t forget you. 🙂 Homemade veggie burgers are the best! Actually its been a first time that I’ve made them.
When Spring is here I just want to use everything fresh from the garden. I think that is a call to do some body detox. 🙂 I create this veggie burgers with a gorgeous flavor.
These are made with a base of chickpeas to provide you with a good source of protein. They also include peas, corn,and sweet potato along with a mixture of herbs and spices for extra flavor. I used quinoa to bind it all together which makes it even healthier.
Crispy on the outside and cooked to perfection. These fantastic burgers are the ultimate healthy comfort food.
Here is the recipe:
- 400g chickpeas rinsed well under cold water
- 1 clove garlic
- 1 large sweet potato, cooked
- 1 cup frozen peas
- 1 cup frozen corn
- 1 cup quinoa, cooked
- 1/4 cup spring onions, chopped
- 1/4 cup coriander fresh, chopped
- 1/4 cup parsley fresh, chopped
- 1 tbsp curry powder
- 1 tsp cumin
- 1 tsp red paprika powder
- 1/2 tsp salt
Preheat oven to 180°C or 365 F. Add all ingredients to the food processor and mix until everything is well combined. Take approx. half a cup of mixture and make into a burger shape. Place the burgers on a tray lined with baking paper and place in the oven to cook for 40 min. Assemble the burgers with your favorite toppings. Bon appetit!
